Well Im new at this too, so take it for what its worth, but it looks like its an insect problem, and most of them do the chewing damage at night. You may want to check your plants well after dark with a flashlight to try to catch the culprits in the act to determine if its slugs, earwigs, etc. Knowing more specifically what is causing the damage will make it easier to learn how to stop it...

Overall, you are looking pretty good!

Not sure what is eating your leaves, you will have to investigate. I'm also gonna say do night time investigation to spot the critter.

Tomatoes are hard to troubleshoot, they can have so many diseases/issues. If I were to guess, I would say phosphorus deficiency. I am seeing that in mine. It is caused by it being too cool overall. As the soil warms up, the plant will be able to absorb it and will "green up". Since you are in TX, not sure if that applies...

This is a good guide:

Love your boxes..what type of material is that? As far as your tomatoes, I am having the same issue. I planted four plants. Three are fine and something keeps eating the leaves on the other. I did go ahead and spray the plants with Seven. It seems to have helped for now anyways.
