I need some help with my first year Rhubarb

I planted Rhubarb this spring and the plants are growing like wildfire!
The question is, I know I'm not supposed to harvest stalks in the first year but what am I supposed to do with the stalks ... Leave them on the plant till next year? Trim them off when they wither? Trim the in the fall? The plants are huge, some of the leaves are over a foot wide and the stems are probably an inch or more in diameter. Anyone know what the rule is for first year plants stalks?

I don't know about first year stalks. My bed is decades old. I leave all stalks on the plant. They form a nice mulch cover for winter. All I ever do with mine is cut the flower stalks off as soon as I see them.
