The USDA website is the best home food preservation website out there. I have used it for years and have NEVER had a recipe fail. It is a great website for new or experienced food preservers alike! I encourage anyone interested to check out the link Rooster posted.

Another good resource is Ball's website; www.freshpreserving.com. Just ignore their attempts to sell new gadgets you don't really need.

In the canning classes I teach, I use a LOT of info from Ball, USDA, & the National Center for Food Preservation.  All are excellent resources.  NCFP also has a really good book for a great price.  You can see it on their website.

The only thing I don't like about the Ball books is that many of the recipes are repeats...

Another good book is called Stocking Up.  I've read all 3 editions and own the 3rd one.  I'd check the library.
