Put wine in Sauerkraut before or after fermentation

I want to can some wine sauerkraut and was thinking of adding it just before canning instead of at the beginning of the recipe, any information about that?

When is the wine added to the recipe?

I would think after, as the alcohol in the wine might stop the fermentation of the cabbage.

on second thought; I would also simmer off the wine to get rid of the alcohol and then add it.

I've seen that recipe but since the brine needs to be refilled with evaporation I find it very unlikely, adding at the end is the answer I think, but I can't find any confirmation online...

It's funny how sometimes some things can't be found online....I might have to email a restaurant in Germany to really find out! Wink
