Is there any worth to keeping the plant in the bed, or should I just dig it out and plant something else at this point? I've seen notes about getting other heads, but not sure how worth it they really are, vs planting a new veggie.

I personally found it to be worth it, but that was in the fall and too late in the year to plant anything else anyway. They developed multiple side shoots and fairly quickly too. It's kinda up to you - do you already have plans for those squares? Maybe keep some in as an experiment to see whether it turns out to be worth it to you, and pull others to get different things started now vs. later.

+1 If you don't need the space, leave it. You could also remove some lower leaves to give you room to plant seeds like lettuce and radishes in the same square.
