What is pH and why do I need to know this?

This blog post is pretty good at describing in laymen's terms what pH is and is not.
Stop Liming your Soil Based on the pH!

Does anyone else have some good links that describe pH and it's importance in the garden?

It's interesting that in Mel's first book/recipe he actually called for a "coffee can" of lime to be added for a recipe to fill two boxes. I wonder what the reasoning was??
