Zucchini Bread

Zucchini Bread

Makes and amazingly moist and wonderful bread that is great for breakfast or an afternoon snack.

Beat:
3 eggs
1 cup vegetable oil
2 cups sugar

Add and Mix:
2 1/2 cups peeled and grated zucchini
3 teaspoons vanilla

Add and Mix:
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
3 teaspoons cinnamon


Bake at 350 degrees for about 1 hour in greased loaf pans.
Makes two loafs.

Nuts, raisins, or chopped dates may be added.



I personally like to substitute about 1/2 cup of apple sauce for half of the oil. Lowers the fat and adds moisture to the end product.

This was fabulous, the only thing I did differently was use coconut oil instead of vegetable oil! I highly recommend it! Thanks for sharing the recipe!

I made 2 loafs from almost this exact recipe. they are in the oven now.

don't you just love it when you can just go out side into your garden pick what you need and make something amazing out of it!!
