Grilled Corn Salsa

Simple but tasty summer picnic salsa.


4 ears corn, husks and silk removed
1 small red bell pepper
3 green onions chopped
2 tablespoons coarsely chopped fresh cilantro
1 jalapeno pepper, seeded and chopped
2 tablespoons fresh lime juice
1/2 teaspoon coarse salt

Preheat grill for a medium hot fire. Spray corn with olive oil cooking spray or rub olive oil on the corn.
Place corn on the grill rack and grill about 3minutes on each side until lightly charred and tender. Transfer to a plate and allow to cool. Cut kernels from cobs.
Mix corn with all other ingredients and refrigerate to let flavors blend.


This is really good on homemade fish tacos. I like to grill up some white fish like tilapia and make up tacos with the fish, corn salsa, shredded lettuce, chopped tomato, cilantro, and a light herb crema sauce
