Did I ruin them?

Post  R&R 1011 on 8/22/2013, 7:06 pm

So I made a batch of roasted canned tomatoes.  I just looked at them in the pantry.  Some of the tomatoes are sticking out of the juice and they look like they are turning brown.  Did I ruin them?  I assume they are suppose to be completely emerged in juice?  This is my first year canning so Im a bit clueless.  Do I have to dump them? If the jars sealed they should be ok. There will be oxidation because they are not submerged but they should be fine. How did you process them?

Ahhhh... so you pressure canned them....... did you allow the canner to cool on it'sown before opening the lid and then let the jars cool some more before removing them? Typically, a lot of the liquid s lost when the canner is opened too soon and the jars removed too soon....
