Coleslaw Tip

Coleslaw Tip

The 2 1/2-inch rain we received over the weekend has made my cabbage the Jolly Green Giants of my SFG. My thoughts are turning to this year's first bowl of coleslaw.

I don't really follow a recipe when I make coleslaw. For years I've made it by sprinkling shredded cabbage with a little salt, a lot of sugar, shaking on a little vinegar, and binding it all together by stirring in a little mayonnaise.

A couple of years ago I learned that for a much fresher taste, replace all the vinegar with fresh lemon juice. Usually the juice of one lemon is about right for one medium head of cabbage, but use more or less to taste.

Since I started using lemon juice, many people have asked me for the recipe.
