Broccoli Cheddar Soup - Panera Style

Windmere,

Here is the recipe.  
I advise printing a copy for yourself. The recipe is from 2010 and who knows when/if the link might disappear!

One hint --  I also used up the stumps of broccoli and put it in the soup.  If you do the same be sure to  peel off the outer skin of the stump, I found it doesn't get soft and pieces remains stringy even after cooking and going through the blender.

One more hint --- a simple substitute for the quart of 1/2 and 1/2 is one qt of milk with 4 tablespoons butter.   Also its a convenient way to adjust the fat content to your liking.

Almond milk sounds great to me. I've had a delish side dish of broccoli and slivers of almonds.  I'd like to know the results if you try almond milk.

LM, I made the soup earlier this evening.  It was a surprise... I made it while my wife and daughter were out.  They came home just as I was about to puree it... and I could hear my daughter say, "Something smells good!" as she walked through the front door.

LM... this soup is outstanding.  I'm afraid I made the fully leaded version.  However, I love CC's idea about the almond milk (we have that every day with our morning cups of coffee).  Also, I liked your tip about milk and butter.  I've done that many a time in a pinch.  I love the options homemade affords when it comes to using less fat and also less salt.

Oh... and my daughter loves it!

I'm glad you and your family are enjoying the soup and like you said it is Full Leaded, but also adjustable.   I think of it as a soup treat to enjoy once in awhile.  If you are familiar with the web site called skinnytaste.com there is a low fat version of cream of broccoli soup. It's even discusses how many weight watcher points..  I have not tried it but it looks pretty good.

LLM thanks for that website reference.  I might try that... although my family might be a bit spoiled by the full fat version.  Regardless, I really want to try the slimmed down version.

Just a side note:  Like with many dishes... this soup tastes AMAZING the second day.
