Tuesday lunch was a tuna salad sandwich that used cucumber, dill, and radicchio.
Tuesday snack was a sugar baby watermelon.
Tuesday dinner was a lasagna that used tomatoes via the awesome marinara sauce llama mama shared. Instead of noodles I used zucchini slices, and instead of spinach I used lamb's quarters from the strawberry bed.

Wednesday lunch was a BLT using slices of my biggest Black Krim tomato, and a Thai cucumber salad with a Tollie's sweet pepper.
Wednesday's dinner used more lamb's quarters, Green Zebra tomatoes, and a yellow summer squash - in a Thai curry fish soup.

Breakfast today used some parsley in the smoothie.
Lunch was caprese salad (fresh basil and a mix of tomato types was used), and pan seared radicchio (with sauteed onion, salt, black pepper, smoked Balsamic vinegar, a pinch of Parmesan cheese and some pistachios; served with garlic toast.)
Dinner is going to be delicious lasagna leftovers!

professorm ... thanks for the eggplant and tomato idea. I found a recipe on the internet and sautéed eggplant, tomatoes, banana pepper, green bell pepper, multiplier onion and garlic. All those ingredients came from the SFG. It was quite good as part of our evening meal.

Sweet banana pepper, beit alpha cuke with Wishbone blue cheese...yum!  And homemade Pioneer Woman fettuccine Alfredo...oh. My.

CC Let me state that this year I did not have one bug in my apples.  That has never happened before and I put it down to luck in the timing of everything.  On the other hand it could have been the TLC I had given the old tree for the past two years after at least twenty years of complete neglect. Or it could have been that the tree understood English and heard me say that I was going to chop it down.

Eggplant

We have been having good luck with our eggplant so I tried my hand at some dishes:

Eggplant parm: I am trying to eat healthier, so I sliced the eggplant into medallions, dipped them in egg, breaded them then baked them in a cookie sheet. (I ate about 1/3 of them with some salt because I ran out of tomato sauce) Then I built my parmesan as one would expect, but I threw in a layer of thin sliced tomatoes from the garden and baked...I learned the hard way that you should peel the skin off the white eggplants, but other than that, it was very good.




Baba Ghanouj: Grill roasted eggplant (skin off), parsley, tahini paste, lime juice, garlic and a food processor.


Much to my surprise it was a big hit with my daughters...they love hummus and said it was alot like that

Making cabbage rolls starting with a 10 lb head of cabbage grown in one of the old style SFG beds. As part of the ingredients for the sauce we are using tomatoes from that same old style SFG bed and multiplier onions from one of the new style SFG beds. I may post photos about this later under the "Second Year SFG in Canada" thread.

Yummy- I am eating lots of fresh cherry tomatoes, and big tomatoes these days. I also seem to have a life time supply of kale Smile I am starting to get fall strawberries too. They are delicious.

Sauteed two handfuls grape tomatoes and garlic in butter till smooth and wonderful smelling. Placed over steamed swiss chard, with grated parmesan.  Very bright combination of healthy  flavors.

Amazing that a child eats some veggies at breakfast.  

RT,  Good photos of eggplant dishes.  Missed them. Is your recipe in the Recipe section. I just happen to have some eggplants and a lime (left over from company that likes lime in their Corona Wink )

Wilted some Red Malabar Spinach in butter and had it with a scrambled egg and cheddar cheese, for breakfast. Will be prepping assorted marinades and grilling zucchini to have with ribeye steaks for dinner. clap

Brussel sprout leaves/raspberry smoothie for breakfast.  Snacked on a cuke for lunch.  Supper is fall lettuce & banana pepper salad along with black bean noodle/miso/chard/chives soup.

I was pleasantly surprised to find a enough pods for a small harvest.  I started the bushes from seed back in May, but they were among the last plants I put out (early July) and I wasn't sure they'd have sufficient time to grow.  Since I was running out of time and soil I just dropped the four seedlings into one of those reuseable shopping bags from Walmart and hoped for the best. Other than some leaf damage from Japanese beetles, they're doing well. I expect another harvest or two before first frost.  Here's how the bunch looks, today:

Congrats GB. Okra seems to like the hotter weather. I direct seeded April 7 and they are just now producing. I grow them every year and never eat even one!
