carrot tops toxic?

Post  steve638 on 1/25/2015, 9:44 pm

Are carrot tops safe to eat?  I'm finding articles for and against eating carrot tops.  Both myself and 6 year daughter have been snacking on them from the garden and have had no problems.

But I recent found a book on juicing call "Skinny Juices" by Danielle Omar, MS, RD and on page 93 it says carrot greens and Rhubarb greens can be toxic?

Technically I should be poisoned cause I personally ate a bunch of carrot tops.  Also, there's books and reciepes out there for carrot tops.

What do you all think?  It seems there's no aggreement on if carrot tops are safe to eat.

Thank you,

Stephen Rager

I know people who eat them, but I wont. They taste terrible to me. I'm not able to research the subject just now. So I cannot speak to any possible toxicity...

Ok, so I poked around a bit. Cultivated carrot tops are nontoxic. Wild carrot is toxic. Do not eat that plant.

I am also interested in "nose-to-tail" cooking.  Here's some interesting recipes I found.

Carrot Top and Rice Soup:

Grilled Cheese with Roasted Carrots and Carrot Green Pesto:

Carrot Greens with Sesame Dressing (I want to for sure try this when my carrots are ready in spring):

Carrot Top Soup:

My daughter and I have found that, with bolted lettuce leaves, if we use a ton of balsamic vinegar to make a dressing, the leaves are palatable.  I'm wondering if that might be true of carrot tops.  Blanching and ice shocking works with bolted lettuce too.

If you make any of the above or come up with some others, please let us know.

I always eat mine. I heard somewhere that the nutrients in them compliment the nutrients in the root, making perfect nutritional harmony. I love you
I guess that's what 'whole food' eating is...eating the whole food.

We tried them in a salad and again steamed and didn't care for them.  May try again but one green we love is beet greens  The are colorful in salad and great cooked
