Can't find an old recipe: V-8 juice

Post  johnp on 2/21/2015, 11:32 am

I was rewarded last night when my wife wanted something out of the refrig. in the shed. I went out and as I was looking through the freezer section and found a qt. of homemade V eight juice and a container of tomatillo sauce. Very Happy  After thawing the  juice and tasting I remembered how super good it was and started looking for the recipe. I can't find it. I know it was here last summer because I used it. Could someone repost it so I can save it please ?

Johnp

Thank you for reminding me that I also have homemade V8, tucked away in the basement chest freezer.

Don't know if you enjoyed a recipe I shared on the forum or someone else's recipe.
I get a little crazy over this recipe because it is so delicious.  I've also used a jar of my own canned tomatoes instead of fresh.  Either way, very happy with the results.
Sometimes I added shredded carrots, a little chard, a little shredded broccoli stumps, and parsley.  It's all rrrealy gooood.

Think a bunch of useful stuff is a result of people going off topic  ( myself included ) and gets buried.  I know I shared my V8 recipe but it was not in the beverage topic so I went to my personal recipe book in order to share it here once again.

"Recipe adapted from Gourmet Magazine, who got it from Chef Brill Williams of The Inn at Sawmill Farm in West Dover, Vermont.

Homemade Tomato Juice Recipe

   Yield: Makes about 1 quart.

Some tomatoes are sweeter than others, depending on their ripeness and the variety of tomato. Use the ripest tomatoes you can. Added sugar will balance the natural acidity of the tomatoes, use more or less to taste. Tabasco hot sauce is also to taste, depending on your desired level of spiciness.

Ingredients

3 pounds very ripe garden tomatoes, cored, roughly chopped
1 1/4 cups chopped celery with leaves
   1/3 cup chopped onion
   2 Tbsp sugar (to taste)
   1 teaspoon salt
   Pinch black pepper
A couple shakes of Tabasco sauce, about 6-8 drops (to taste)

Method

1 Put all ingredients into a large non-reactive pot (use stainless steel, not aluminum). Bring to a simmer and cook, uncovered, until mixture is completely soupy, about 25 minutes.

2 Force mixture through a sieve, chinoise, or food mill. Cool completely.

Store covered and chilled. Will last for about 1 week in the refrigerator."

LM, I copied and pasted the recipe from the link you posted.  Very Happy  Some times, links stop working ior are no longer available, so I wanted to make sure the actual recipe was saved here.
