Canning Zucchini Noodles

Canning Zucchini Noodles

G'day all Very Happy  I have become addicted to zucchini noodles (noodles made from zucchini using a peeler, Veggetti or Spiralizer).  I'm wondering if anybody has tried to preserve something like this by canning?  I'm almost sure they wouldn't freeze well.  Thanks for your advice.

Freezing would be a better option. After 90 minutes in a canner the zuke noodles would be mush.

You might also try dehydrating them.  Then you just need hot water to plump them up again...

I froze mine last year raw and that seemed to work well. . . .  not quite as firm after they come out, but they still worked

Maybe someone can comment.  Maybe 1 minute of blanching and 1 minute of ice bath.  Then freeze on an open cookie sheet before bagging for the freezer.  I tried freezing kale and chard without blanching but they were inedible when I thawed them.  I'm very happy that someone told me to blanch and ice bath kale and Swiss chard for one minute/one minute, then freeze.  What a difference! Very Happy
