Playing with my food

a local boiled crawfish joint (The Crawfish Hole) has a $5 Friday special.  $5 per lb. of boiled crawfish.  I bought 10 lbs. Friday.  I ordered potato and boiled corn sides.  We did not eat it all so I popped the tail from the remaining crawfish and scooped the fat from the heads.

G fishes so Saturday I took some frozen Red Fish fillets out of the freezer.  I peeled 2 left over potatoes and smashed  them.  I added some minced garlic, minced green onions, 1 tbsp. bread crumbs, sea salt, fresh ground pepper, 1 cup minced crawfish tails and 1/2 tsp reserved fat and 1 raw egg.  Mixed together and formed into patties.  I coated each patty with bread crumbs.  No egg or milk mixture.  I patted my fish fillets dry with paper towels then seasoned the same way sans crawfish tails and fat.

I pan grilled the fish in a copper clad stainless skillet on medium high heat with a little olive oil.  The potato patties were cooked the same way in a non stick skillet. 

In a small sauce pan I sautéed green onions and a slivered clove of garlic in butter.  I used an entire stick - 1/4 lb.  Do not use a high heat - the butter will break.  Add 1 tbsp. dry white wine and 1 tsp lemon juice.  Add at least 1 tbsp. heavy cream.  That will keep the butter from breaking.  Chop 1/2 of the remaining crawfish tails.  Leave 1/2 whole.  Add to sauce. 

While making your sauce you should be watching your fish and potato patties - turning once when the bottom is brown then removing from the heat and transferring to a plate to keep warm in a 200 degree oven. 

Remove the sauce from the heat BEFORE it reaches the desired consistency.  It will continue to cook. 

For sides I made a nice salad of mixed greens, romaine, cucumbers, celery, tomatoes and Kalamata olives.  Pan grilled asparagus. 

Plate the potato cake with the thick end of the fillet over the cake.  Top with crawfish cream sauce.  Plate asparagus with tips over the fish.  Salad on the side. 

OMG!

Thought G was going to hurt himself.  Not from a cook book just playing with my food.

G is my "husband"/domestic partner.  He and I have been together for 25 years without the formalization of marriage. He is the love of my life and I am his.  BTW we are a heterosexual couple in case anyone cares. I don't.  I am 62 and he will be 68 in May.  You will hear and learn more about G as our conversations progress.

Just a bit of info. You will see on the Forum DH (dear husband) DW (dear wife), DDIL, (dear daughter-in-law), etc. so G can be referred to as DH for ease of reading.

Funny thing.  I worked for the Government and at one time processed travel orders. Our shorthand was

DS= dependent spouse
DW = dependent wife
DH  husband
DS  son
DD daughter
DMIL  mother in law

and etc.

all of this stuff with the initials and not spelling out words is actually addressed in the terms of service. Not everyone understands particular abbreviations and their use is discouraged.

So you worked for the government in what  capacity?  Were you in the military?  If so what branch of the service were you in?  I joined the Navy when I was 29 years old.  I served 6 years active duty then quit.  Kind of a quandary - my peers age wise were much senior to me in rank.  My peers rank wise were kids.

6 months later I realized that I was missing something and I join  the Navy Reserves.  I served 16 years in the USN Reserves and loved every minute. 

Enlisting in the Navy was one of those things that I did for all the wrong reasons but it ended up being the best thing I ever did.  I wish I had enlisted ten years earlier.

I like to mess with people who ask me to spell something.  I give them the military spelling - Alpha, Bravo, Charlie, Delta, Echo,  Foxtrot,  etc..  Occasionally I get someone who clicks and I am able to share a laugh.

Sorry all - I ramble.


Thank you all for your positive responses to my recipes.  I really love cooking especially with fresh ingredients.

LOL, I do the same thing!  Tends to confuse those who haven't been exposed to it...

Wasn't in the military myself, but am an Army wife.  (DH is out now.)  We are private teachers and a lot of our students are ex/military or govt folks.
