Just finished preparing my offerings to the family dinner.  Collards (not enough in my garden for the whole crowd) and cranberry/orange relish.  And I have a jar of hot pepper vinegar from my 2014 pepper plants and a jar of grape jam from my 2015 grape vines.


Hope everybody has a safe, sane, and fattening Thanksgiving.  Tomorrow you can get back on the healthy eating track.

Three turkeys today for 25 people. Lots of leftovers for them to bring home tonight.

Went to Mom's yesterday.  Will be smoking one turkey & baking another tomorrow.  Mike wants another Thanksgiving dinner!  That's fine with me.  At .69/lb, turkey can't be beat this time of year!

I'm thinking I'll get another one & can it to save room in the fridge...

That is true, very reasonable at the store right now! And so tasty too! I always wonder why we don't eat turkey more often?

Didn't get the canning done yesterday.  Just too tired.  But will be doing it today!

We skipped the Black Friday madness - just hunkered down here at home & watched football.  We both hate crowds anyway.  And we both get impatient with people we see acting stupid.  (Sorry, there's just NOT a nice way to put that.)

My daughter and I went out around noon yesterday, got some good deals, didn't really need anything in particular, a couple impulse buys! No madness though. I live in a small town.

Okay, so I see how tired I still was this morning.  Smoking, not canning!

Smoker's going w/ turkey, boston butts, & beans.  Unfortunately the skin on the turkey has torn badly....   Mad

Other turkey's in the oven.  Got onions ready to go, cranberry jello mold (raspberry jello, crushed pineapple, mandarin oranges, walnuts, whole cranberry sauce) is done, the stuffing we dried last year is ready to go except for the apple, turkey broth, & egg, and the stuffed mushrooms are almost ready.

Except for the dressing, yes it was, Sanderson!  

DH had made a huge batch last year.  So we decided to dehydrate 1/2 of it (non-meat items) to see what would happen.  We have discovered that it does not do good at all.  He said that all he could taste was the celery we added.  He was very disappointed.  

Thankfully we have stuff on-hand to make him a new batch today.

I think I'm also going to try canning some of the beans to see if we can save freezer space...

Last night, I made turkey stock from one of the gifted carcasses. I can freeze it in batches but I would love to can it to save freezer space for blanched veggies. We only have a side by side. Today I have to cook down the other carcass. It is so neat to go into the garden and snip fresh herbs.

You do have a pressure canner, right, Sanderson?  Well....  Quarts are 30 min or so.  Pints are about 20.  Give or take depending on your altitude, of course!

TRUST me!  You'll do great!  And broth is a great way to begin.

Right now I've got something like 18 quarts of turkey broth, close to that in chicken plus some pints, a few pints & quarts of ham (terrific in split pea soup).
