Lol, did it get really sour on you?  I start tasting mine about day three, and when it tastes good, I stick in in the fridge.  I'm not sure what to do about too sour kraut.

I have been eating the kraut I made before I cut my thumb and it tastes so good. Halfway through the jar and one jar left so I had better get on and make a lot more.

A couple of years ago I made about ten jars at once and that was fine too and I was sorry when I used it all.  But I got sidetracked and never made any more until now.

Now that my thumb has healed I will make it a priority to make another batch.
