Just harvested the basil, parsley, and a garlic bulb to make pesto. Here's how I do it:

2 cups (packed) basil leaves
1 cup (packed) parsley
3 - 4 cloves garlic
1/2 cup walnuts or sunflower seeds (pine nuts are traditional but too expensive for me)
3/4 cup parmesan cheese -- I prefer the shredded found in the dairy case
3/4 cup olive oil
salt if desired, but parmesan usually has enough salt for me

Dump all into a food processor and process until smooth. I freeze it in a sandwich sized container making the layer 1" deep. After frozen, pop out, cut into 9 squares and freeze the squares in a zip-lock bag. To use, I take out a square or two, let thaw and add a bit more olive oil to get the consistency I want. Great as a spread with crackers or bread and for a sauce over pasta.

Yes, but see what you have to look forward to. By that time most of my garden will be just a memory.

Bolting cilatro

Megan, what do I call cilantro when it bolts? Coriander!

Belfrybat, your pesto sounds so good. Mine is just starting to come back from the rabbit attack. Maybe someday I'll be able to raise enough to make pesto. In the meantime, enjoy some for me.

Coriander seed is great, but I love cilantro leaf more. I know it's non-standard for chimichurri, but oh my goodness it's good!

ironically i made pesto and pasta also! I didnt use the parsley, and i did use pinenuts (large ME population) and my daughter made a funny face because it was green, then ate more than any of us!
