Pesto biscuits
These are really cheaters but oh, so good.
1 roll of the cheap refrigerator biscuits
pesto thinned with equal amount of olive oil
Lay out the biscuits almost touching each other. Make two or three indentations with you finger. Fill the indentations with the thinned pesto mix. Bake according to package directions. These are really fantastic.
No need to use the fancy biscuits as it's the pesto topping that makes these so good.

My favorite pizza of all time involves homemade thin crust, pesto (homemade or thinned a bit) spread very lightly, goat cheese, prosciutto, and fried mushrooms.
