Salsify...

Anyone out there have any experience with the "vegetable oyster"?  My instinct is to approach from a carrot perspective... searched the forum - no hits...

No experience....but looks like a hardy, time intensive prep kinda primitive veggie. I love those, but they sometimes require more prep for consumption than we are used to! Sounds interesting! Eliot Coleman speaks highly of it from a hardiness perspective.
