Garlic Scape Pesto recipe

Here is a Garlic Scape Pesto recipe I have had for quite sometime. I got it from a friend who got it from a friend who got it from a friend...
It is very close to the recipe that is under the topic of  "Garlic scape hummus " by ribarr4 on this thread.
Anyhow, I just harvested all my Garlic Scapes and will be making pesto! As a side note, I don't waste the unopened flower top, it is a great snack all by itself!



Garlic Scape Pesto

Ingredients:

1/3 cup walnuts

½ cup olive oil

½ cup shredded Parmesan (we use the Market Basket shredded jar kind)

½ tsp salt

Black pepper to taste

1 cup garlic scapes, top flowery part removed, cut into ¼ inch slices

Instructions:
Place scapes and walnuts in the bowl of a food processor and whiz until well combined and somewhat smooth. Slowly drizzle in oil and process until integrated. With a rubber spatula, scoop pesto out of bowl and into a mixing bowl. Add salt and pepper to taste.

We leave out the shredded Parmesan cheese until we're about ready to serve the pesto because we scoop 2 large cooking spoonfuls into Ziploc quart freezer bags to store in the freezer. We just find it's better not to freeze with the cheese in it.

We flatten out the bags and lock them to store in the freezer. When we're ready to eat, wait about 1 or 2 minutes, open the bag and cut away the plastic and break into pieces into a glass/pottery serving bowl. When defrosted enough to mix up the pesto and oil again, add the ½ cup of shredded Parmesan and Enjoy!

Thanks, bigdogrock, I have added it to my Recipe File.  I have garlic scapes in my freezer.  Good tip about adding the cheese separately.

Oh that sounds delicious, Rock! I happen to have a lot of scapes in my freezer too. Can't wait to try it! I don't have a food processor tho. Do you think I could use a blender? Or a nutribullet?

Either will work! I have used them for this. The Bullet is easier to clean then the big blender.

Ok Rock, you're in big trouble. Wink I found a couple of scapes out in the SFG today that I had missed and so I ate one of the flowers remembering your snacking comment in the first post. Just about knocked the top of my head off. It was like chewing on a clove of garlic. I probably won't be able to talk to anybody for a week. tongue Are we supposed to do something to them first?

Oh no, is this where I grovel at your cyberfeet and beg for forgiveness? I forgot to mention the fact that Hades ain't got nutin' on a garlic flower top. I am sorry. I should have, but I like hot stuff and they are not that hot to me. THE FLAVOR, is so incredible in them, it is so intense, to me more so than the heat. One more thing, if you eat the flower top in the garden, be careful not to breath on any of your plants as they will melt. Laughing

I believe you and I'll be sure to follow your advice...epecially since my cat ran and hid in the closet when I tried to pick her up just now.
