Sweet potato soup?? looks Yummy.

I just found this recipe and thought I would share it. I know a lot of us have sweet potatoes by now. This has sweet potatoes, ham and beans and other goodies. I've GOT to try it this weekend.

Ham and Sweet Potato Soup
Ingredients:

1 1/2 pounds sweet potatoes, peeled and cubed
1 15- or 19-ounce can cannellini (white kidney) beans, rinsed and drained
1 1/2 cups cubed leftover cooked ham
1/2 cup chopped onion (1 medium)
1/2 teaspoon dried thyme, crushed
1/4 teaspoon ground black pepper
1 32 ounce carton reduced-sodium chicken broth
1/2 cup half-and-half or light cream
Creme fraiche (optional)
Paprika (optional)

Directions:

In a 3 1/2- or 4-quart slow cooker combine sweet potatoes, beans, ham, onion, thyme, and pepper. Pour broth over mixture in cooker.
Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours. Stir in half-and-half.
Mash potato mixture slightly with a potato masher to reach desired consistency. If desired, top each serving with creme fraiche and/or paprika.

Ooo, that sounds good, Mr B. I'm still probably a month away from harvesting mine, but I'll be waiting for the rest of you to rate this recipe. geek

Another version  Thai Sweet Potato Soup

2 cups mashed sweet potato pulp
3 cups chicken stock
1 can coconut milk (or coconut cream for extra goodness)
2 cloves garlic, minced
1 small onion, minced
1 tbl coconut oil
1/2 cup lemon grass,  packed
1/2 cup water
Thai red chili paste (not the curry paste) to taste,  I start with 3 tbls
salt to taste
cilantro
 

Cook sweet potatoes and mash the pulp.  Boil lemon grass in water for 10 min and discard the leaves.  In large pot saute garlic and onion in coconut oil until onion is translucent.  Pour into a blender and add lemongrass water and sweet potato pulp.  Puree  Pour into garlicy pot and add chicken stock, chili paste and coconut milk.  Simmer for 30 minutes.  Top with chopped cilantro.

If you like it spicy hot, get hold of some fresh thai peppers and add a few to the simmering soup.   You might want to strain them out before serving.

If you like the taste of pad tai, add 1 tbls of peanut butter to each bowl of soup for a different flavor.
