Cayenne Pepper Sauce

Post  Roseinarosecity on 11/28/2017, 5:47 pm

Here is the recipe for the Cayenne pepper hot sauce I made, but with other peppers added (mostly red ripe Cayenne, red Fresno, & red Jalapeno):

Ingredients

  • 8 cups loosely filled fresh red ripe Cayenne, red Fresno, and red Jalapeno peppers, stems remove
  • 6 large cloves garlic, peeled and hard tips cut off
  • 1 - 2 teaspoon salt (you might need more, we tend to stay away from salt)
  • 5 cups white vinegar (or just enough to cover the peppers)

Instructions (BEST TO DO THIS OUTSIDE on a side burner from a grill)

  1. Place the peppers, garlic, and salt in a nonreactive large pot with a lid. Add the vinegar and bring to a boil. Reduce heat, cover and simmer for 20 minutes.
  2. Set aside for one hour and let it cool.
  3. Carefully pour the contents into a blender and puree until smooth (about 2 minutes). For the puree, use the same pot you used for boiling, start straining through a fine mesh strainer to remove the seeds. When you have finished straining, bring to a boil over high heat. Once boiling, turn the heat off and allow to cool before pouring into containers to refrigerate.

Keep refrigerated. Shake before using.

Ooo!  Thanks, Rose!  I have a bunch of jalapeño peppers frozen that I really have no idea what to do with, until now!  I had 1 plant, and I mean that baby just kept putting them on!!!!

Rose, thank you for sharing your recipe, especially the warning about cooking outside!
