Green Grape Pie

This is for Chocolatepop. It's an old recipe of my grandmother's that is from memory, so I hope I get all the amounts correct.

Green Grape Pie

About 2 c. green grapes (pick when nearly full-size but before seeds begin to form)
1 1/2 c. sugar
1/4 tsp. salt
2 tbsp. cornstarch
1-2 tbsp. butter
2 uncooked pie crusts

Preheat oven to 375 degrees. Roll out enough pastry for one pie crust and place in pie plate.

Simmer grapes in saucepan just until tender - add a little water if needed to keep from sticking. When grapeskins are barely tender, mix sugar, salt, and cornstarch and stir into grapes, stirring gently until thickened.

Pour mixture into pie crust, dot top with butter, and top with second pastry crust or make a lattice-top. If using a full pastry crust on top, cut holes in top to release steam, and bake about 45-60 minutes or until crust is golden brown and filling is bubbly. (You might want to cook this on a parchment-lined sheet pan in case the filling boils over.)

Green grapes make a tart pie, flavored similar to a gooseberry pie, so adjust sugar according to taste.

I have a newly found grape vine. I don't think it will fruit but maybe there are u picks later!
