lunch menu

Howdy Folks:

I don't know how this will taste but...

We picked a few veggies from the SFG.

Cooked 1 packet of wild rice and 7 cups of brown rice with a little salt and pepper.
When the rice was about 1/2 cooked added onions w/tops and carrots.

Stirred in one pound of shrimp cut into 1/2 inch chunks
Stirred in one pound of Tilapia fish fillets cut into 3/4 inch chunks
The rice was slightly dry so we added chicken stock to moisten.
Placed in a large baking dish and topped with broccoli, sliced onions and sliced tomatoes and a sprinkle of parsley flakes.
Baked until the shrimp, fish and veggies were just about done.
And finally sprinkled shredded cheese on top and baked a minute or two longer.

We will take the above in a covered dish for fellowship this morning and see how folks like it.

I usually cook "off the cuff" and make things up as I go, so exact measurements were not used.

God Bless, Ward and Mary.

Sounds good, sounds like a Jambalaya Smile They make that down here, without the wild rice and brown though. I bet folks will love it!!
