California Greek Garden Salad

This was so good I had to share. My main goal was to use my tomato avacado and fresh herbs:

Serves 1 as main dish:

1 tomato, cut into bite sized pieces
1 small avocado, sliced into 12ths (6 pieces of each half)
Dill - a teaspoon-T?
Basil - 1 large leaf
Mint - 2 leaves
Parsley - 1 tsp or so
(use scissor to hold herbs over salad and cut into small pieces)
Nasturtium leaves - 2 small
Feta cheese, crumbled - 2-4 T
1T olive oil
1 tsp or less vinegar (lemon juice would be even better)

I cut up equal parts of tomato and avocado into largish chunks. Then using scissors added the herbs. I was hesitant about the mint but it was DELICIOUS. I used about 3 parts olive oil to one part or less of vinegar and whisked it before adding. Lemon juice would make a great substitute for the vinegar but I didn't have any on hand.

Cucumber would also be excellent in this salad although it was perfect as prepared.

I'm going to have to try this - I never would have thought to mix basil, mint, parsley & dill together in a salad.
