My first canning adventure!

So, I'm really going to have two. Today and tomorrow. I had honestly never seen a home canned jar of anything until I moved to the south. My family never did that, gardening yes, canning, heck no. So, my hubby's grandmother use to make this peach preserve that everyone loved. With the decline of her health she the last time she made any was sever years ago. Well, tomorrow we're going over there so I can learn how to make it. Everyone is very excited, as am I. I don't like peaches to much, but knowing how to make it will help make different kinds. Woot!

I picked up Ball's intro to canning package while I picking up the stuff I was told to get for the jelly adventure. I comes with it's own three jar canning rack, three jars w/lids, a "cookbook" with recipes for using just the three jars, and tells you everything else you need. Since I had an over flow of tomatoes that were cracked, I decided that instead of throwing them out to trim them very good and I'm going to try their salsa recipe. I'm going to try this tonight, and I'm going to make the hubby take some pictures of me doing it and freaking out, should be a good laugh.

Canning is easier than you might think, if you atre doing jelly and it dosent set then just call it syrup, etc. My LW has put up close to 50 -12 pack cases this year and we are just getting started ! We buy suger at sams in 25 lb bags try balls bread and butter pickle recipe it is to dye for as well as the watermelon rind pickles yum!!!!

Good luck! I will be going on the canning adventure soon, too. I want to try my mom's old Bread'n'Butter pickles recipe, though. And by the looks of my pole beans, there will be Dilly Beans as well! (I've never had those before.)

BTW, is the peach preserve recipe a family secret? If not, please share, and of course post photos.
