Poached Eggs w/ Cherry Tomatoes & Scallions

This is one of my favorite South Beach Diet recipes. You can sub any type of onion, or top with chopped fresh herbs if you like. I have one of those stove-top cup egg poachers, which makes this super easy. Recipe includes how to poach an egg if you don't have a poacher.


Poached Eggs w/ Cherry Tomatoes & Scallions

1 TBSP extra virgin olive oil
2 scallions, thinly sliced
8 oz cherry tomatoes, halved (about 1 1/4 cups)
1/8 tsp salt
2 tsp white vinegar
2 large eggs

Heat oil in small non-stick skillet over medium heat. Add scallions and cook until fragrant and beginning to soften, about 2 minutes. Add tomatoes and salt; cook until tomatoes have softened and given off some of their juices, about 3 minutes. Remove from heat, cover and keep warm while preparing egg.

Bring a wide saucepan of water to boil; add vinegar, reduce heat to simmer. Crack one egg into a shallow cup and gently slide into the water. Repeat with second egg. Use a slotted soon to keep eggs separated if necessary. Cook until yolks are slightly set, 3 to 4 minutes.

Divide tomato-scallion mixture between two bowls and top each with egg. Spoon any remaining tomato juices over the egg. Be sure to have some whole wheat toast ready to mop up the bowl!
