Zucchini pizza

I just found this! It uses grated zucchini to make the pizza crust. What a nice idea for using up zucchini.

Haven't tried it yet, but looks like a winner. It does call for a small amount of flour, but I'd guess that if you used amaranth flour or similar, it could work as a gluten-free recipe, too.

I printed the recipe for my DauinLaw who loves zucchini but can't get enuf recipes for its use.

Another pizzucchini

Well, that's my name for it... I have found a delicious way to use the abundant zucchini this time of year. Simply spray a casserole dish with cooking spray, cover the bottom with a layer of zucchini sliced 1/2" thick. Spoon your favorite pizza sauce on top, being sure to cover each slice of zucchini. Put another layer of zucchini, then spoon the sauce on. Top with your favorite pizza toppings - pepperoni, sausage, seasoned ground beef, peppers, onions, mushrooms, etc.... Top it all off with grated cheese. Your favorite, again. Bake at 375 degrees for about half an hour, or until the veggies are cooked. It's great - and SO simple! Smile

I have far more yellow summer squash in excess than zucchini so would the yellows work just as well for the pizza crust. I give some to an Amish friend whose wife grates them for fritters for a table full of hungry kids, obviously they don’t freeze them but use them fresh. She also runs a home bakery and makes jams and jellies for sale.

This does sound delicious, this year my yellow crook neck squash is not doing well so zucchini it will be.
