Need Suggestions

I didn't grow it in my SFG, but DH came home with a large shipping box of romaine lettuce that someone gave him. There is NO WAY we can eat that many salads before it goes bad. Even if we shared with all of the neighbors there will be LOTS left over. We don't have any chickens.

I'm at a loss. What do I do now? I hate to see it go to waste. We can always put it in the compost pile, but everything in me says it needs to be eaten or preserved. I've never heard of any ways to preserve lettuce. If you freeze it - it goes to mush and if you can it - it goes to mush.

HELP!

Preserving romaine

I googled and found this blog entry about making and freezing lettuce soup, as well as freezing shredded romaine to use as greens in cooking.

You can braise romaine, too, and grill it. (Neither will help you preserve it, but different ways to eat it!)

Wow! Grilled lettuce, braised lettuce, frozen lettuce and lettuce soup! Who 'da thunk it?

I will be busy trying to get DH and DS to try these new dishes. DH will have to, because he's the one who started it all by bringing enough lettuce home to feed an army!

Thanks so much for the help. One of these days I'll remember that I can google!

My first dish for surplus lettuce and greens is always Wilted Lettuce Salad. Search the forum for my recipe and google for a bazillion variations!

Speaking of Hot Bacon Fat

Megan, I ordered a shrimp and spinach salad in Applebee's a while back that had a hot, sweet, bacon dressing. It was the BOMB!

Hmmm....I think I'm going to try recreating that dressing.

Camprn, Mmmm! Lettuce Rolls! Looks like an easy recipe, too.

Boffer, I haven't been able to locate your recipe, yet. But I'm still looking.

Thanks for all of the great ideas.

The kids are out of school tomorrow and the oldest DGson is here. Between him and my 16 year old DS, I'm sure we will have fun creating lots of new lettuce dishes to try.

Lettuce rolls are great... You might also be able to do something with a summer roll, too.
