Potato, garlic, onion, swiss chard soup...

Potato, garlic, onion, swiss chard soup...
great way to make a lovely meal from the garden.
i just threw together:
potatoes, peeled, sliced
onion, peeled, sliced
swiss chard, rinsed and diced - remove stalk
garlic, minced
water
beef sausage (or use chicken broth or whatever makes you smile - i was in the mood for beef today)
spices - today i tossed in:
parsley
basil
mustard
curry
cilantro
cumin
pepper
sea salt
and half a stick of butter (or real cream if you have some - i'm out of cream right now - but as julia childs said - everything's better with butter! *grin*) if you're not into dairy - sub coconut milk. it's pretty tasty in potato soup!
i make this vegan when i know i have friends visiting who don't eat meat/dairy/etc or have those allergies.
simmer about 20 minutes.
serve.
this is such a forgiving concept - just take whatever veggies/meat base you like and simmer together with spice.
throw in some black beans, too for extra flavor and protein. (i've been serving bean dishes all week and i'm not in a bean mood right at the moment).
have some tomatoes or green peppers, toss them in.
really nothing is ever wrong in a veggie style soup.
would love to hear ya'll's combinations - might give more ideas to folks who are not usually soup makers. . (and this is an EASY way to use up leftovers into something 'new' and yummy!!!)
