National Pie Day in USA 1/23/2011

I am going to just pull out those blueberries I have been saving in the freezer and make a pie. What's your favorite pie?

If I still lived in Maine, probably blueberry pie! I do love apple, though.....

But then there's Chocolate Caramel Walnut Tart. To die for.

Horseradish/Apple pie

I don't know if I like this or not cause I didn't eat any of it, horseradish/apple pie, but I was with my mom when she was buying the horseradish root and apples and all the stuff she needed to make it with. My dad asked her what she did different with the pie after his 3rd piece! She told him she put horseradish in it and you should have seen his face Razz

Freshly grated horseradish must be used here because the prepared type contains vinegar and will alter the flavor noticeably. When horseradish is heated it turns nutty-sweet in flavor. Recipe by Susan Belsinger.

5 medium-large tart apples, preferably Stayman Winesap
2 1/2 tablespoons lemon juice
1/3 cup white sugar
1/3 cup brown sugar
3 tablespoons unbleached flour
1/4 teaspoon freshly grated nutmeg
1/4 cup freshly grated horseradish
2 9-inch pie crusts

Preheat oven to 425° F. Peel the apples, core, and slice them into a bowl. As you slice them, add the lemon juice, a little at a time, to keep the apples from darkening. Add the sugars, flour, nutmeg, and horseradish, and toss well.

Roll the pie crusts out on a floured surface. Place the bottom crust in the pie plate, and evenly spread the apple mixture in it. Cover with the top crust, and crimp the edges decoratively. Prick the top crust with a fork in several places.

Bake the pie in the center of the oven for 10 minutes. Reduce heat to 350° F, and bake the pie for about 45 minutes longer, or until the top is golden brown.

Josh, this sounds great!. We enjoy horseradish in our applesauce, when it is served with smoked porkchops.

Never had Horseradish Apple Pie, but because I know we like the flavor of these two ingredients together, I'll bet the pie is wonderful. Can't wait to try it.

It is a Cook's Illustrated recipe and I don't feel right posting it. BUT, I am a website member over there, so anyone who'd like it, please PM me your email address I will be glad to email the recipe to you from their website. (I already sent it to you, miinva.)

One note: It is an intermediate-skill recipe which does require making caramel from scratch. If you've never done this before, you will need a candy thermometer, 2-piece tart pan with removable bottom, ability to follow directions, a heavy-bottom saucepan (and nerves of steel.) Smile

(It is SOOOOOO dark and sinfully rich, though... omigosh!)
