Leggy seedlings question

I have seedlings that are long and leggy - they are in the window that last year resulted in beautiful happy plants, but I think we had more sun last year. So I was wondering....what if I pinched them back to their first true leaves....would that work?

It might depend on what kind of seedling they are. Carrots.... not so much; Peas....sure.
Only one way to find out for sure and that is to do it.
