What are you eating from your garden today?

I thought maybe this would be a fun ongoing thread. I know I often want to shout out what I'm eating that I GREW but don't what to start a new thread every day, lol.

Just had a yummy stirfry with 4 varieties of squash, 3 varieties of peas, and 1 pepper from my garden. Mixed all that up with red onion, rice, and chicken from the store. Should have taken a pic before I ate it.

my 1 yo tried to eat compost, but that is as close as we get to eating from the garden :lol

I wish I were eating something from my garden today, but I'm away on business right now. Before I left I had my first salad from the garden. I harvested mixed greens and a green onion for the dressing. It was amazing! I've also used some of my basil in my cooking.

Sounds like my 18 month old! Oh, wait, he's 19 months old today...maybe he'll stop putting things in his mouth!

I picked enought lettuce, spinach, and chard from my son's garden for a family salad tonight. His wife cut one of the chinese cabbages (before it headed) today for a dish she is making.

I also brought down a big baggie of bok choy and another of kale from my garden. Bok choy is eaten and kale for dinner tonight.

We had our first salad of the year last night for dinner. The kid picked it herself and she might have been too generous. It will be a week or so before we can have another. =) It was super yummy, though!!

Today... probably just basil.

Yesterday... Greek basil, a Cherry Belle radish, and a Sunsugar tomato.

The day before... sweet basil and a Sunsugar tomato.

What a Face

Unfortunately, the radish had very little flavor. I'm chalking that up to the fact that it suddenly hit the 80s in mid-February, and we've had very few days below the 80s since then. Oh, well, I'll try radishes again in the fall. Meanwhile, the rabbits enjoyed the rest of them. albino albino albino

Today....nothing. Sad

I have to wait awhile. We dessimated the garden this weekend. Two salads and burgers that required lettuce, too. I harvested about 10 squares of lettuce in those two days...and spinach. Garden needs a little time to recupirate.

However, this weekend, another wave of lettuces and carrots get planted. Once up and running, we should have lettuce for the fridge. My lettuce keeps a long time in the cooler. At least that's the goal.

Basil - the little 1 inch tall seedlings I trimmed out of the peat pots to get down to 1/per. They smelled so good when I was trimming them off that I couldn't waste them. They were only a nibble, but they were incredible!

Lettuce, lettuce and more lettuce. I bring a daily salad container with me to work that also includes Bok Choy and spinach (thus far survived bolting). Carrots (funny stubbly shapes but very tasty) in zip loc bag for snacking too.

I've got Matt's Wild Cherry and Riesentraube tomatoes coming on every day now. Riesentraube is definitely the star of my tomatoes so far this year. Such a warm "spring" that I'm having trouble with the fruit set on larger varieties. Only one tomato has made it into the house so far (for my husband). They seem to disappear into thin air right after being picked.

Prepared a bunch of chard to go in the lasagna I had planned for tonight, but it ended up being a grumpy kiddos/clean out the leftovers kind of night, so that'll be tomorrow. Probably sneak some squash in there, too.

Lunch for me most days is a pan full of squash, snap and snow peas (green and yellow for both squash and peas), mixed with the occasional damaged pepper that I've had to pick early, some chard, and whatever store bought veggies I've got in the fridge that need using. A few minutes with a spritz of olive oil and some salt and pepper and I think could be happy eating this for months on end!

Oh, how could I forget the Poona Kheera cucumbers I've been snacking on! So refreshing, like eating water!

One tiny cherry belle radish - very hot!

I have grape tomatoes that will be ready any day I am very excited. Everything else is growing but not producing yet. Can't wait though!

Finally some Parris Island Coos Romaine and Frizzy Headed Drunken Woman lettuce for tonight's salad. Still waiting on the Revolution lettuce and Salad Giant Radishes. Swiss Chard still going strong, but need to plant new chard for this spring and summer.
