My favorite spring omelette

When I come up with things on my own I don't generally follow a recipe. I just throw in a little bit of this and a little bit of that and it usually comes out how I want it. That's how I was taught. Nevertheless, I have made this omelette enough that I think I can quantify it.

This make one 2 egg omelette. You can double, treble, etc the recipe as needed. If you aren't any good at making omelettes you can make this as a scramble.

My favorite spring omlette

2 eggs (or one egg plus 1/4 cup of egg beaters)
6-10 leaves each of baby spinach and arugula or radish leaves if you have them)
2 small radishes
2 medium baby bella mushrooms (or anything you have on hand)
1 tablespoon of onion (bulb or green)
1 table spoon butter or oil
salt, pepper, and colby cheese to taste

Beat together eggs, salt, and pepper. Set aside.

Chop spinach, arugula/radish leaves, radishes, mushrooms and onion. Set aside.

Heat NONSTICK skillet over medium-high heat. Add butter/oil. Once melted/hot add in the veggies. Saute for 3-4 minutes or until greens are wilted and onions are translucent.

Pour eggs over veggies, reduce heat to medium, and cook lifting around the edges as one would do when making an omelette. 3-4 minutes or until the eggs are mostly set.

Flip omelette over and cook through 3-4 minutes.

Sprinkle with cheese and fold over onto a plate. Serve.

MMMMM, I would add a bit of broccoli to mine, I have a feeling I am also going to have to get creative with crook neck squash too.

Yum, Dizzy, I love spinach, onion and cheese omelets and the other ingredients you've added would only make it even better! Ok, now I want an omelette - don't have all those ingredients right now, but should still be delish!

Radish leaves are delicious!

I like to saute them with onions and garlic just like I would do spinach or kale. They are kinda peppery just like the radishes themselves.

I've don't a saute with radish leaves and kale and it was a hit. The peppery hint it added to the Kale was delicious!

I planted radishes as a grid in my brick bed, so I am going to try adding some of the leaves to salads - once they grow of course! Am I counting my radish leaves before they sprout? Laughing
