Rhubarb! Ideas?
My rhubarb is just about ready for harvest.
Below are some ideas. Anyone else have any? I like to make crumble and muffins with my rhubarb. Or just simmer it in a little water, add sugar and enjoy. It kills me to see a neglected rhubarb patch going to seed in someone else's backyard or alley.

Jam, more jam, crisp, more jam, canned, more crisp, jam....yup lots of rhubarb. Want to make a rhubarb slush and maybe some rhubarb syrup. Yup LOTS of rhubarb rofl...

Mhmmmmm....just had rhubarb crisp for dinner. I could eat it 7 days a week. Rhubarb cake, strawberry rhubarb jam....... Nummmy!!!! I just traded a box of plants for a bunch of rhubarb that my coworker says her husband routinely just mows over because they don't eat it ***GASP***!

..I have a bed that is about 4x8. I don't mow it over! I share with almost anyone that asks. Then when they are getting really ratty looking from the bugs in about August I let them flower! It is so pretty! My sister just found out she has rhubarb rofl...her hubby didn't know what it was so for the last three years he had been mowing it over! She was slightly aggravated at him!

Rhubarb pie. Strawberry/rhubarb pie. Rhubarb marmalade. Stewed rhubarb as a sauce over ice cream. Stick of rhubarb dipped in sugar and eaten raw. Rhubarb juice. Rhubarb cake. Rhubarb crisp.
Another name for it was 'Pie Plant." It's poor man's dessert because it grows almost anywhere, even in the sub-arctic and is almost impossible to kill.

Never saw or heard of rhubarb until I was in the third grade. We moved to a house in Independence, MO. and there was a huge patch out by a little shed in the 1/2 acre garden. Daddy just plowed a lot of it under so he could plant beans. I'm thinking it must not grow well here in eastern NC because of the heat.
I love strawberry rhubarb pie and rhubarb sauce, but never make it because of the cost of fresh rhubarb. I have used the frozen pieces a few times.

I like your blog and plan to explore it in detail. Next year I would love resume rhubarb wine making. Sweet rhubarb wine is marvelous. I acutually made some once that rivaled the piestengel from the Amana Colonies but that was in my hay days of the 70"s. The Oregonian (a newspaper) has an exceptional garden writer, Vern Nelson. He suggests the following, Rhubarb Bitters:
Rhubarb bitters
Vern Nelson for The Oregonian
The following is a rhubarb bitters recipe adapted from an orange bitters recipe given me by John Eisenhart, chef at Pazzo Ristorante. It will yield 2 1/2 to 3 cups of bitters, which is not nearly enough, so make larger batches while you are at it.
Ingredients:
The peel from 2 oranges cut into thin strips with as little of the white pith as possible
The peel of 1/2 grapefruit cut into thin strips with as little white pith as possible
1/2 to 1 cup chopped fresh rhubarb
1 juniper berry
3 inches tamarind pod with seeds
3 coriander seeds (or substitute 4 or 5 cloves for the juniper, tamarind and coriander)
1 to 1 1/2 cups vodka or Everclear
Mix the ingredients in a large jar and screw on a lid to seal it. Shake it every 3 to 4 days for 12 weeks. Strain out the solids and enjoy!
Champagne cocktail
Place a sugar cube in a Champagne flute. Put 1 to 2 tablespoons of bitters (or to taste) over the sugar cube. Fill the glass with Prosecco or other sparkling wine.

My rhubarb is ripe for the picking as well. I havent had rhubarb for quite a while and it was ready to harvest before I was ready to do anything with it LOL
Thanks for the recipes as i was going to ask if anyone had ideas. My mom had 3 plants in her "garden" and made sauce with it and i have made pie as well.. I forgot how early in the season (here) it is ready for picking.. This is the 3rd summer for the plant and it has finally taken off after I thought that it was a lost cause.
Time for bed, but is there a recipie section here? I havent had a chance to look through them yet.
