Chocolate Zucchini Cookies
Chocolate Zucchini Cookies
Ingredients:
1/2 cup butter ( or butter flavored shortening)
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 teaspoon pure vanilla extract
2 1/4 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups grated zucchini
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2.
In a medium bowl, cream together the shortening, white sugar
and brown sugar until smooth. Beat in the egg and vanilla. Combine the
flour, cocoa, baking soda and salt; gradually stir into the creamed
mixture. Fold in the grated zucchini. Drop by rounded spoonfuls onto
the prepared cookie sheets.
3. Bake for 8 to 10
minutes in the preheated oven. Allow cookies to cool on baking sheet for
5 minutes before removing to a wire rack to cool completely.

I tried chocolate cake last year; last week I found out about making zucchini brownies and now this... Thanks now I'm going to have to make both!

I think its funny how you can never hear of something before and then suddenly in the same day you see it twice...am I the only person that happens to?
This is the 2nd recipe TODAY for this kind of cookie.
From Barbara Kingsolver The Animal Vegetable Miracle
Combine in a large bowl:
1 beaten egg
1/2 cup butter, softened
1/2 cup brown sugar
1/3 cup honey
1 tblspn vanilla extract
Combine in separate bowl and then blend into the liquid ingredients:
1 cup white flour
1 cup wheat flour
1/2 tspn baking soda
1/4 tspn cinnamon
1/4 tspn salt
1/4 tspn nutmeg
Stir the following into the other ingredients:
1 cup finely shredded zucchini and 12 ounces of chocolate chips
Drop by spoonfuls onto greased baking sheet, flatten with the back of the spoon. Bake at 350 for 10-15 minutes.
So there is another variation for everyone to try!
