Tonight's Menu..

Here is what's on the table for tonight. (We try to cook something new each week. This year, we are trying to focus on garden-grown stuff, but with the heat wave we had, it's been difficult to get much more than a salad or two and the occasional pepper or tomato.)


Yee-Ha Pork Chops w/ Atomic Salsa Corn

For pork chops:
1 packet taco seasoning (1 oz)
4 boneless chops
1 tablespoon canola/vegetable oil or EVOO
Salsa (hopefully, you make your own)

- Rub taco seasoning on pork chops. In skillet, brown chops in oil over medium heat.
- Add 2 tablespoons water, turn heat to low, and simmer chops for about 35 minutes. (Add water if needed) Spoon salsa over chops and serve.

For corn:
1 jar hot salsa (8 oz)
1 package frozen whole kernel corn (16oz), thawed
1/4 teaspoon garlic powder
1/2 cup shredded monterey jack cheese

- Combine salsa, corn, garlic powder, and 1/4 cup water in saucepan. Cook low-medium heat, stirring occasionally, for 6 minutes. Pour into serving bowl and sprinkle with cheese.


If I remember, you may see a picture. This sounds so good!

Finished product....with a small side of hash-brown cassarole, too.

MMM...that sounds yummy.

I should do that...try and make something new each week, that is a great idea!

I found a book at Borders' "Going Out of Business Sale." It's called 1001 Fast Easy Recipes. It has no author because it's a compilation of recipes. The publisher is Cookbook Resources. It cost me all of $6, and has been the best cookbook I've ever found. The recipes are simple and quick. Most stuff is made in under 45 minutes. I highly recommend it to anyone wanting to broaden their horizons......although, we bought it because we were bored with having the same thing every week.
