Preserving oregano

I have a square of oregano. What is a good way to preserve it?? Maybe like basil just chop and put into ice cube trays with water perhaps, I am guessing - any experienced thoughts out there?? Thank you! Llama Momma

Hi,

Saving oregano is easy. Harvesting herbs is best done in the morning, but in a pinch any time will work before your first frost. Cut it down to size and tie a string around the base of the bundle or bundles. Then hang them upside down in a dark warm area. I use my kitchen cabinet knobs. It will take a few weeks to dry. Once it is dry run your fingers down the stems to strip off the leaves. Put your dried oregano in a seal-able baggie or jar for a winter of Italian cooking. Remember that oregano is a member of the mint family, it will most likely grow back with twice as much bounty.

I dry my oregano, usually just on a plate. Same with thyme. My taller herbs like tarragon, sage, comfrey, I bundle and hang.

I just put mine in a food dehydrator. 18 hours and it is all dry!

We do the same thing, dehydrate the oregano. Some we keep in jars whole and some we grind for powdered or ground oregano. Sure tastes better than the stuff you buy!! Smile
